Ingredients
✔ 1 cup quinoa, rinsed
✔ 2 cups water or chicken broth
✔ 2 boneless, skinless chicken breasts
✔ 1 tbsp olive oil
✔ 1 tsp garlic powder
✔ 1 tsp smoked paprika
✔ Salt and black pepper, to taste
✔ 1/2 cup cherry tomatoes, halved
✔ 1/4 cup cucumbers, diced
✔ 1/4 avocado, sliced
✔ 1 tbsp feta cheese (optional)
✔ 1 tbsp lemon juice
✔ 1 tsp sesame seeds (optional garnish)
Instructions
1️⃣ Cook the quinoa – In a saucepan, combine quinoa and water, bring to a boil, then simmer for 15 minutes until fluffy. Let sit for 5 minutes.
2️⃣ Season the chicken – Coat with olive oil, garlic powder, smoked paprika, salt, and pepper.
3️⃣ Grill the chicken – Heat a grill pan over medium-high heat and cook for 5-7 minutes per side until fully cooked. Let rest before slicing.
4️⃣ Assemble the bowl – In a serving bowl, add quinoa, grilled chicken slices, cherry tomatoes, cucumbers, and avocado.
5️⃣ Add toppings – Sprinkle feta cheese, sesame seeds, and drizzle with lemon juice.
6️⃣ Serve and enjoy!
