Ingredients
1 cup puffed quinoa
1 cup dark chocolate chips or chopped dark chocolate (70% cacao or higher)
1 tablespoon coconut oil (optional)
A pinch of sea salt
Optional toppings: shredded coconut, crushed almonds, freeze-dried fruit
Instructions
Line a baking sheet with parchment paper.
In a heatproof bowl, melt the chocolate and coconut oil over a double boiler or in the microwave using 30-second intervals.
Stir until smooth and completely melted.
Add the puffed quinoa to the melted chocolate and stir until evenly coated.
Using a spoon, scoop small mounds onto the prepared baking sheet.
Sprinkle with sea salt or optional toppings.
Chill in the refrigerator for 20–30 minutes or until the crisps are firm.
Store in an airtight container at room temperature or in the fridge.
Notes
You can swap dark chocolate for vegan or dairy-free chocolate if needed.
To make it sweeter, mix in a bit of maple syrup or vanilla extract.
