Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
Juice of 2 lemons
Zest of 1 lemon
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon chopped fresh herbs (thyme, basil, or rosemary)
Salt and pepper, to taste
For the Quinoa Salad:
1 cup quinoa
2 cups water
1/2 red onion, diced
1 cucumber, diced
1 red bell pepper, diced
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
Juice of 1 lemon
2 tablespoons extra-virgin olive oil
Salt and pepper, to taste
Instructions
1.In a bowl, whisk together lemon juice, lemon zest, olive oil, garlic, herbs, salt, and pepper.
2. Place the chicken in the marinade and let sit for 30 minutes to 4 hours in the fridge.
3. Rinse the quinoa thoroughly. Bring it to a boil with water, cover, and simmer for 15 minutes. Let cool.
4. Grill chicken over medium-high heat for 6–8 minutes per side until cooked through.
5. Let chicken rest before slicing.
6. Combine quinoa with diced veggies and herbs. Drizzle with lemon juice and olive oil. Toss well.
7. Serve the grilled chicken sliced over or next to the quinoa salad.
Notes
Don’t over-marinate the chicken — citrus can break down the meat.
Cool quinoa fully before mixing in fresh ingredients to keep salad crisp.
Add feta, chili flakes, or roasted vegetables for more flavor and texture.
