Ingredients
2 ripe bananas (medium to large)
¾ cup cottage cheese (full-fat or low-fat)
2 large eggs
½ cup oat flour (or almond/all-purpose flour)
1 tsp baking powder
½ tsp vanilla extract (optional)
Pinch of cinnamon (optional)
Pinch of salt
Butter or oil for cooking
Instructions
Mash bananas in a bowl until smooth.
Add cottage cheese and eggs. Mix until fully combined.
Stir in oat flour, baking powder, salt, and optional spices. Do not overmix.
Let batter rest for 5–10 minutes.
Preheat skillet on medium heat and grease lightly.
Pour ¼ cup of batter per pancake and cook until bubbles form (2–3 minutes).
Flip and cook another 1–2 minutes until golden.
Serve warm with your favorite toppings.
Notes
Use very ripe bananas for the best natural sweetness.
You can substitute oat flour with almond or all-purpose flour.
