Ingredients

1 cup red lentils (or green/brown for texture)

2 cups fresh spinach (or frozen)

2 carrots, diced

1 can (14 oz) diced tomatoes

1 teaspoon cumin

1 teaspoon turmeric

½ teaspoon smoked paprika

Instructions

Prepare Ingredients: Rinse the lentils and chop all vegetables.

Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onions, garlic, and carrots, cooking for 3-5 minutes until soft.

Add Spices & Lentils: Stir in cumin, turmeric, and smoked paprika. Add lentils and mix well.

Simmer the Soup: Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
