Description

This lentil soup is a hearty, protein-packed dish made with simple ingredients like lentils, vegetables, and aromatic spices. It’s a comforting, easy-to-make meal perfect for dinner.


Ingredients

  • 1 cup lentils (brown, green, or red)

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 3 garlic cloves, minced

  • 1 teaspoon cumin

  • ½ teaspoon turmeric

  • 1 teaspoon paprika

  • 4 cups vegetable or chicken broth

  • 1 can (14 oz) diced tomatoes

  • 1 bay leaf

  • 1 teaspoon salt (or to taste)

  • ½ teaspoon black pepper

  • Juice of 1 lemon

  • ½ cup chopped fresh parsley or spinach (optional)


Instructions

  1. Rinse the lentils under running water. Dice the vegetables and mince the garlic.

  2. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, then sauté for 5 minutes until softened. Stir in garlic, cumin, turmeric, and paprika.

  3. Add the lentils, diced tomatoes, broth, bay leaf, salt, and pepper. Stir well and bring to a boil. Reduce heat, cover, and simmer for 25-30 minutes.

  4. Once cooked, remove the bay leaf and stir in lemon juice. For a creamier texture, blend a portion of the soup.

  5. Garnish with fresh parsley or spinach and serve hot with bread or a side salad.
