1 cup lentils (brown, green, or red)

1 onion, diced

½ teaspoon turmeric

1 teaspoon paprika

4 cups vegetable or chicken broth

1 can (14 oz) diced tomatoes

1 bay leaf

Juice of 1 lemon

½ cup chopped fresh parsley or spinach (optional)
Instructions

Rinse the lentils under running water. Dice the vegetables and mince the garlic.

Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, then sauté for 5 minutes until softened. Stir in garlic, cumin, turmeric, and paprika.

Add the lentils, diced tomatoes, broth, bay leaf, salt, and pepper. Stir well and bring to a boil. Reduce heat, cover, and simmer for 25-30 minutes.

Once cooked, remove the bay leaf and stir in lemon juice. For a creamier texture, blend a portion of the soup.
