  • 2 large eggs
  • ¼ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika

Mashed Potato Layer:

  • 3 large russet potatoes, peeled and cubed
  • 4 tablespoons butter
  • ½ cup heavy cream
  • ¼ cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Toppings:

  • ½ cup shredded cheddar cheese
  • ½ cup cooked and crumbled bacon
  • ¼ cup chopped green onions

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • Prepare the meatloaf base: In a large bowl, mix ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, salt, pepper, and smoked paprika. Press the mixture into the bottom of the baking dish.
  • Bake the meatloaf: Bake for 20 minutes, then drain any excess grease.
  • Make the mashed potatoes: While the meatloaf is baking, boil the potatoes for 15 minutes until fork-tender. Drain and mash with butter, heavy cream, sour cream, cheddar cheese, salt, and pepper.
  • Assemble the casserole: Spread the mashed potatoes evenly over the meatloaf. Sprinkle with additional cheddar cheese and bacon.
  • Bake again: Return to the oven and bake for another 20 minutes, or until the cheese is melted and bubbly.
  • Garnish and serve: Top with chopped green onions and serve warm.
