Mashed Potato Layer:
- 3 large russet potatoes, peeled and cubed
- 4 tablespoons butter
- ½ cup heavy cream
- ¼ cup sour cream
- 1 cup shredded cheddar cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
Toppings:
- ½ cup shredded cheddar cheese
- ½ cup cooked and crumbled bacon
- ¼ cup chopped green onions
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Prepare the meatloaf base: In a large bowl, mix ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, salt, pepper, and smoked paprika. Press the mixture into the bottom of the baking dish.
- Bake the meatloaf: Bake for 20 minutes, then drain any excess grease.
- Make the mashed potatoes: While the meatloaf is baking, boil the potatoes for 15 minutes until fork-tender. Drain and mash with butter, heavy cream, sour cream, cheddar cheese, salt, and pepper.
- Assemble the casserole: Spread the mashed potatoes evenly over the meatloaf. Sprinkle with additional cheddar cheese and bacon.
- Bake again: Return to the oven and bake for another 20 minutes, or until the cheese is melted and bubbly.
