Ingredients
1 cup all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1 pinch salt
1 egg
1¼ cups milk
1 tablespoon melted butter
1 teaspoon vanilla extract (optional)
Fresh strawberries, sliced
Bananas, sliced
Maple syrup or honey (for drizzling)
Powdered sugar (optional)
Skewers (6-inch bamboo or cocktail sticks)
Instructions
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, beat the egg, milk, melted butter, and vanilla extract (if using).
Combine wet and dry ingredients, stirring just until smooth.
Preheat a non-stick skillet over medium heat and lightly grease.
Pour small, quarter-sized circles of batter onto the pan and cook until bubbles form. Flip and cook the other side until golden.
Let pancakes cool slightly. Slice strawberries and bananas evenly.
Assemble skewers by alternating mini pancakes, strawberry slices, and banana slices. Repeat to create stacks.
Drizzle with maple syrup or honey, and dust with powdered sugar if desired. Serve immediately.
