Description

This Walking Taco Casserole is the ultimate cheesy, crunchy dinner delight. Packed with seasoned beef, enchilada sauce, and Fritos, it’s a crowd-pleasing Tex-Mex classic baked to perfection and topped with fresh taco fixings.


Ingredients

1 ½ lbs ground beef
1 small onion, chopped
1 (4 oz) can green chiles
1 (10 oz) can enchilada sauce
2 oz cream cheese
1 (9.25 oz) bag of Fritos corn chips
2 cups shredded Mexican blend cheese
¾ cup shredded lettuce
½ cup diced tomatoes
½ cup salsa
½ cup sour cream
Salt and pepper to taste


Instructions

Preheat oven to 350°F (175°C).
In a skillet, brown the ground beef with chopped onions until fully cooked.
Stir in green chiles, enchilada sauce, and cream cheese. Simmer until smooth and heated through.
In a 9×13 baking dish, layer half the Fritos, all the meat mixture, then half the cheese.
Repeat with another layer of Fritos and the remaining cheese.
Bake uncovered for 15–20 minutes until cheese is bubbly and slightly golden.
Remove from oven and let sit for 5 minutes before topping with shredded lettuce, tomatoes, salsa, and sour cream.
Serve warm and enjoy!

Notes

You can swap the beef for ground turkey or a plant-based alternative for a lighter version.
Top with jalapeños or avocado slices for extra flavor.
To keep chips crunchy, layer them just before baking—not earlier.
